Rhubarb Coffee Cake

One of our all time favorites!
Almost any fruit works well with this recipe.

Ingredients (Cake)

  • 1/2 C. margarine
  • 1/12 C. Brown Sugar
  • 1 Egg
  • 2 Cups Flour
  • 1/2 Teaspoon Salt
  • 1 Teaspoon Baking Soda
  • 1 Cup Sour Cream
  • 1 Teaspoon Vanilla
  • 1 1/2 Cups Chopped Rhubarb

Ingredients (Topping)

  • 1/2 Cup Brown Sugar
  • 1/2 Cup Oatmeal
  • 1 teaspoon cinnamon
  • 1 1/2 Tablespoons melted Butter
  • Lightly mix until just crumbly.


Directions

  1. 1Pre heat Oven to 350 degrees
  2. 2Combine flour, salt , & soda in a small bowl. Set aside.
  3. 3Meanwhile cream margarine & sugar in a large mixing bowl. Beat in egg.
  4. 4Mix in sour cream & dry ingredients. Add vanilla.
  5. 5Place batter in greased 9×13 pan and top with Oat topping.
  6. 6Bake @ 350 for 45- 50 minutes until done.
