Rhubarb Coffee Cake

One of our all time favorites!
Almost any fruit works well with this recipe.
Ingredients (Cake)
- 1/2 C. margarine
- 1/12 C. Brown Sugar
- 1 Egg
- 2 Cups Flour
- 1/2 Teaspoon Salt
- 1 Teaspoon Baking Soda
- 1 Cup Sour Cream
- 1 Teaspoon Vanilla
- 1 1/2 Cups Chopped Rhubarb
Ingredients (Topping)
- 1/2 Cup Brown Sugar
- 1/2 Cup Oatmeal
- 1 teaspoon cinnamon
- 1 1/2 Tablespoons melted Butter
- Lightly mix until just crumbly.
Directions
- 1Pre heat Oven to 350 degrees
- 2Combine flour, salt , & soda in a small bowl. Set aside.
- 3Meanwhile cream margarine & sugar in a large mixing bowl. Beat in egg.
- 4Mix in sour cream & dry ingredients. Add vanilla.
- 5Place batter in greased 9×13 pan and top with Oat topping.
- 6Bake @ 350 for 45- 50 minutes until done.
