Ingredients

  • White Bread 1/4# cubed ( no crust) 3 Slices
  • Walleye Cooked/Steamed & Cooled 2 Fillets
  • Onions Diced 2 Tblsp.
  • Parsley, Chopped 2 Tblsp.
  • Eggs, Whole 2 Each
  • Old Bay Seasoning 2 tsp.
  • Mayonnaise 1/3 Cup
  • Black Pepper Pinch
  • 7 C. White Flour
  • 2 1/2 C. Wild Rice Cooked & Cooled
  • 1 1/2 C. Craisins

Directions

  1. 1Preheat oven to 450.
  2. 2Poach Walleye in White Wine, Lemon juice, & 1 Bay Leaf. Cool.
  3. 3In a small bowl, combine all ingredients and mix well.
  4. 4Form into balls roughly 3 ounces each being careful to not over pack them.
  5. 5Bake for 8 minutes.
  6. 6Top Cakes with Clarified Butter.
  7. 7Garnish with Fresh Parsley & Lemon Wedges.
  8. 8Serve with Tarter Sauce.
